The secret of cats' tongues lies in the use of whipped egg whites as a lightening agent, combined with butter for softness and a melting quality. Icing sugar (finer than caster sugar) ensures a smooth, delicate texture that dissolves instantly on the tongue. With just four main ingredients, this biscuit demands absolute quality from each one.
