The mousse is made from whipped egg whites and yolks giving it a remarkable lightness for a tiramisu. Raspberry brings its natural acidity in place of coffee, creating a summery, fruity take on this Italian classic. The almond biscuit base absorbs the flavours without disintegrating, thanks to the almond flour that stabilises it.
