The generosity of the fruit (strawberry and raspberry leading the ingredient list) gives this charlotte its natural and intense aroma. The mousse is whipped from pasteurised cream and egg whites, giving it an almost ethereal lightness. The house-made sponge finger, soft and lightly soaked, acts both as a casing and a complementary texture.
